Banana Bread


Got any too ripe bananas hanging around like specimen 7? Well if so, I've got a recipe for you. I've adapted it from numerous recipes to make it my own &... well, it's delicious. Take something yucky & make it scrumptious. :) But after eating a few pieces... go for a walk. And if it's too hot... do some water aerobics. Ha ha...

Nutty Heather's Banana Bread
Yield: 2 loaves

3/4 c. butter
3/4 c. honey
3 ripe bananas, mashed
3 eggs
1 t. vanilla
1/2 c. (soured milk, buttermilk, plain yogurt or sour cream)
2 c. flour (freshly ground whole wheat preferably)
1 t. baking soda
1 t. baking powder
1 t. cinnamon
3/4 t. salt
1/2 c. walnuts, chopped (optional)
1/8 c. brown sugar (optional)


In a large bowl, cream together the butter & honey thoroughly. Blend in bananas, eggs, milk (buttermilk, yogurt, sour cream...) & vanilla. In another bowl sift together flour, baking soda, baking powder, salt & cinnamon. Combine dry ingredients to creamed mixture & mix well. In (another) separate bowl, mix together the walnuts & brown sugar. Pour into greased loaf pans & sprinkle nutty crumble on top evenly Bake at 350 degrees for 50 minutes. DON'T OVERCOOK! Enjoy!

  1. Mmmm...sounds delicious! Although, ours never make it to # 7...my son eats them like a monkey! We can't keep bananas around here.

    Maybe I'll have to buy double so I can try this! I have some fresh wheat that I could grind...yummy!

  3. I made your banana bread, and it turned out wonderful! I even sent two loaves to my husband's paramedic class and there wasn't a crumb left. Thanks for the great recipe; I'll be passing it along to my family!
