Mix all ingredients together in a large pot and bring to a simmer. Spoon hot jam mixture into hot jars and process in a boiling water canner for 20 minutes.

Wash, stem, and mash all of your strawberries. I used my friend's hand held mixer things to mash them. I gotta get me one of those this year. Here's a general recipe, but you can modify it to your liking. Less sugar, more limes. Whatever.
5 C mashed strawberries
the juice and zest of 2 limes
8 Tbsp maxigel
2 C sugar - or whatever sweetener you'd like.
If the strawberries are really sweet, use less sweetener

*Strawberries were on sale at Superstition Ranch Market for 50 cents! I bought an entire flat & then some. Stock up & freeze them for smoothies, or can then for jam. I did both. Mmm...
