Chicken Tacos... Hinze style

Living in Arizona I can get sick of eating Mexican. There, I've said it. However, this recipe is a winner jam packed with fresh ingredients & splendid flavors. I could eat these puppies all the day long.

Chicken Tacos

Chicken Tenders
Corn Tortialls
Yellow Peppers, sliced
Vine Tomatoes, quartered
Red Onion, finely diced
Ripened Avocado, diced
Lemon
Garlic, two cloves
Coconut oil
Mozzarella Cheese (we only eat white cheese in our home, but you can use what your family enjoys)
**Homemade Salsa, or fresh from the deli

Thaw out chicken. Place in a bowl with the juice from half a lemon, one clove of garlic & a dash of salt & pepper. Cover & chill in fridge for an hour or so. Heat up some coconut oil in a saucepan (2 T.) & saute chicken with another clove of garlic & the juice from the other half of lemon on each side for 3 minutes-ish until golden brown. Throw in the peppers for 2 minutes. Next onions for 1 minute. Next tomatoes for 1 minute. Take off heat. Place cheese between two corn tortillas & heat on stove or grill. Adorn tortilla will veggies & a chicken tender or two. Top with avocados & salsa & serve immediately.
