Chicken Tacos... Hinze style

Living in Arizona I can get sick of eating Mexican. There, I've said it. However, this recipe is a winner jam packed with fresh ingredients & splendid flavors. I could eat these puppies all the day long.

Enjoy them.


Chicken Tacos

Chicken Tenders
Corn Tortialls
Yellow Peppers, sliced
Vine Tomatoes, quartered
Red Onion, finely diced
Ripened Avocado, diced
Lemon
Garlic, two cloves
Coconut oil
Mozzarella Cheese (we only eat white cheese in our home, but you can use what your family enjoys)
**Homemade Salsa, or fresh from the deli

Thaw out chicken. Place in a bowl with the juice from half a lemon, one clove of garlic & a dash of salt & pepper. Cover & chill in fridge for an hour or so. Heat up some coconut oil in a saucepan (2 T.) & saute chicken with another clove of garlic & the juice from the other half of lemon on each side for 3 minutes-ish until golden brown. Throw in the peppers for 2 minutes. Next onions for 1 minute. Next tomatoes for 1 minute. Take off heat. Place cheese between two corn tortillas & heat on stove or grill. Adorn tortilla will veggies & a chicken tender or two. Top with avocados & salsa & serve immediately.

Inspiration

A few months ago when I walked into the child care center at the gym I saw this girl/woman dropping off her kid. She was wearing a sports bra top with workout capris & the lower portion of my jaw ceased to function. My mouth gaped open as my eyes couldn't deter from her six pack & my mind tried to comprehend if that was indeed her child. Wait a second. She has a child AND a six pack? How is that possible? She's NOT a celebrity?

Now this was no ordinary good genes body. This was a well oiled, properly primed, optimally functioning bod. While I stood there baffled, trying to make sense of this conundrum, she disappeared before I could ask her how the crap she keeps up that physique.

My mind was spinning imaging myself with a six pack like that running down the beach my hair tousling to & fro. I enter my MUSCLE class. Standing at the front the room was body goddess in all her muscle glory, ready to teach the class. Hm... I thought. This should be enlightening.

After a painful 60 minutes of 700 squats & lunges, 120 push-ups, hundreds of abs... {& every other muscle group in my body I didn't know I had}... I knew EXACTLY what her routine was. However, as I stood {barely}, breathing heavily & at one point almost hurling, I felt good. I did it!

So although it has taken me months of trying, today was the first day I completed her class using the same weight as her. She does a million sets of everything so this is no small feat. And even though I almost puked once, I still feel accomplished.

I am thankful for this inspiration. I am thankful I am healthy enough to be able to work out as hard as I do. I am thankful for a body that cooperates & a spirit that is willing.

Thank you body goddess! Your six pack does indeed rock.

And...

Here's a little recipe for those hot days approaching. I developed this yesterday when Son dropped the watermelon while trying to carry it into the house from the car. Whoops. All was not lost. Here's the yummy proof. Easy & divine.

Watermelon Lemonade

1 medium to large sized watermelon (seedless preferably)
5-6 lemons, juiced

3-4 dropper fulls of Apricot Nectar Stevia
(or whatever flavor you like)

Cut up watermelon & de-seed the best you can. Juice lemons & put (juice) in blender. Add watermelon & stevia to blender & liquefy. {I did mine in batches because all of the watermelon won't fit all at once.} Strain & put in a pitcher to chill. Stir well before serving. Enjoy!

What do you love?

As women we can get caught up in what we don't like about ourselves. Our spider veins, our stretch marks, our saddle bags, our muffin top. Am I right? But, what do we like about ourselves?

I love my deltoids. They've always been killer. I'm going to focus on my awesome delts this week rather than play that lame "If only..." game. "If only I had a flatter stomach... If only I had narrower hips... If only I had bigger..." Nothing productive ever comes from this evil little game.

So find something about your body you love. I don't care if it's your calves. I don't care if it's your thick, beautiful hair {I hate you BTW}. I don't even care if it's your canine teeth. Pick something & relish in how much you love it.

Oh yes & do something physical this week you wouldn't normally do. Hiking, bike rides, skipping to the mailbox, love making... you choose.

And although I'm not quite ready for the hotness, here's one of my favorite salads to ring in this heat wave we've been experiencing. Enjoy!

Walnut & Pear Salad

2 heads of leafy greens or spinach (1 bag of spinach & 1 head of romaine - whatever you fancy)
3/4 c. Craisins or golden raisins
1 pear, cut into chunks
2 crisp apples
Orange juice (enough to toss apples in to prevent browning & add a little flavor)
2 oz. blue cheese, Gorgonzola or crumbled goat cheese
1/2 c. walnuts, chopped
1/2 c. chicken breast, cooked & cubed (optional)

{I now make ALL of my dressings. It's easy, cheap & a lot better for you.}

Honey Red Wine Vinaigrette:
1/2 c. red wine vinegar
1/2 c. honey
1-2 cloves garlic, pressed
1 t. salt
1 t. coarsely ground pepper
1/2 c. oil

For dressing, mix in a blender. Chop apples & toss in orange juice. When ready to serve, toss lettuce, cranberries, walnuts, apples & cheese in a large bowl. Toss with dressing.

FYI - You may not want to toss the entire salad with the dressing if you think you will not eat all of it. The dressing will wilt any leftovers & be barf.
